A few years ago, our founder, Alex Maverick, kept gaining weight. A friend gave him, “Prevent and Reverse Heart Disease” by Dr. Essylstyn. He then read books by Dr. Ornish, Dr. Fuhrman, Dr. McDougall, Dr. Barnard, & Dr. Campbell. Convinced, he decided to shift to eating a low-fat, whole-food, plant-based diet. Over the next 2 years he lost about 50 lbs.
But a new problem arose. When he went to the store, he was frustrated that all of the so-called ‘healthy’ non-dairy cheese was made from either fat-filled oil or nuts. So he joined the nutrition science program at IU (& launched Plant-Smart) to figure out how to create cheeses that people could eat (in virtually unlimited quantities) without gaining weight or clogging their arteries.
